A Celebration of Culinary Excellence
Boma International Hospitality College (BIHC), hosted the highly anticipated Ladha Za Africa competition from 14th to 18th October, 2024. This was a culinary event that brought together hospitality students and talented hotel chefs below the age of 27 years from various backgrounds to showcase their skills and creativity. The competition aimed not only to celebrate African cuisine but also to foster collaboration and innovation among academia and hospitality industry, highlighting the diverse flavors and traditions of the continent. Թͷ was represented by two students Stacey Nyambura Kamangu and Steven Wamae from the Department of Hospitality and Tourism in the school of Business Economics and Tourism. The students were mentored by Dr. Florence Njau and Dr. Leah Maringa from the Department of Hospitality and Tourism.
Motivation Behind the Competition
The primary motivation for Ladha Za Africa was to promote African culinary heritage while encouraging the hospitality industry and institutions to explore modern interpretations of traditional dishes. Boma Hotel sought to create a platform where culinary artists could demonstrate their talents and creativity, inspiring both participants and attendees. By celebrating African flavors, the event aimed to strengthen the identity of African cuisine on the global stage, showcasing its richness and diversity.
Achievements of the Competition
The competition witnessed a remarkable turnout, with students from 18 hospitality schools and industry chefs from various regions of Kenya participating and showcasing an array of dishes that celebrated local ingredients and cooking techniques. Kenyatta University’s fourth year hospitality student, Stacy emerged a Gold winner in the hospitality institution’s culinary category and Steven was awarded a cerficate of participation.
Highlights of the competition
Diverse Participation: The event attracted hospitality students from Kenyan universities and colleges, established and emerging Chefs from hotels in the industry thus fostering a spirit of camaraderie and shared learning.
Innovative Dishes: Contestants presented dishes that combined traditional flavors with contemporary presentation, pushing the boundaries of African cuisine.
Judging Panel: A panel of esteemed judges, including renowned chefs and culinary experts, food and beverage professionals provided valuable feedback, contributing to the educational aspect of the competition. The event not only recognized culinary excellence but also served as a networking opportunity for participants, week long Ladha za Afrika competition.
The atmosphere at the Ladha Za Africa competition was electric, characterized by enthusiasm and creativity. Participants were seen engaging in lively discussions, sharing techniques, and exchanging ideas. The support from the audience added to the excitement, with cheers and encouragement for the contestants as they prepared their dishes. The Master classes conducted by BOMA and industry experts provided valuable learning experiences for participants and attendees, further enriching the event. Recommendations for Improvement
While the competition was a resounding success, there are opportunities for enhancement in future editions:
Expanded Categories: Introducing more categories could encourage greater participation and showcase a wider range of culinary skills.
Enhanced Promotion: Increased marketing efforts could attract a larger audience, including culinary enthusiasts and food critics, amplifying the event’s visibility and impact. Թͷ being the leading university in Kenya, would be a good institution to host similar competions.
